    Sams Club - Pondering first packer....

    Does anyone have experience or reviews using the brisket that Sam's Club has?  They looked like good cuts of meat and ran from $30-$40 depending on weight.  They were 2.xx a pound, at least I think that's what they were.  Just looking for opinions, not sure what I'm doing with beef!

What temp did you have the smoker set to?  Also, the therm on the WSM is typically off, and can be by quite a bit, which is why most everyone on here has a "probe" therm that they test in boiling water for accuracy.  Might be something to look for in...

    Difference in charcoals in a WSM

    How are you loading the coals?  I have a 18.5" WSM and I can and have ran a smoke over night on several occassions and have had a successful smoke this winter as well without running out of coals.  Have you looked up the minion method?

    Homebrewers Roll-Call

    I've assisted quite a few times with homebrewing.  We did extract with specialty grains and they have all turned out fantastic.  I love nothing more then brewing but with my apartment, I don't exactly have the room to tackle it on my own, shucks!  At least there is room for my smoker!

    Weber Smokey Mountain - I'll 2nd that. I was a newbie as of April or May, not sure which.  The Weber was the best investment I have made!  It is easy to start, holds temp like you wouldn't believe, and you can turn out quite a bit of meat with it!
