Battle Ribs in the Yoder YS640

I thought I would throw my entry in. I tried my hand at some no wrap Beef and Baby Backs ribs. Turned out pretty good. Well, at least the family ate them all up. First time using Meat Church: Holy Gospel and Honey Hog BBQ. Both were very "crowd pleasing". (also tried a peach rub from the...

    Turmeric in Meat Stick

I have a question for the team. If I were to add turmeric to a snack stick will it turn the meat orange like in a slim jim? I have been told that is what turns sausage grease orange. Or is it some other seasoning? What flavor does it impart, if any? Does anyone have any experience with...

Bit the Bullet, Upgrading to 7 pound Hakka Stuffer

I have this same model and found that the walton's stuffer flushers (orange silicon type eggs) work extreamly well to remove the meat in the big elbow.

Cold smoking some cheese in the Yoder

No, the diffuser is in place and is not opened at all. And by opened I assume you mean the two piece diffuser door that is removed during searing is ajar. The 12" tube is placed on the far left side on the main grate.

Cold smoking some cheese in the Yoder

FWIW - I do the same thing. That is, turn on the Yoder just to run the fan (do not hit start). Initially I put the pellet tube on top of the burn pot. However being in the direct path of the fan they would ignite and the temperature shot way up. A swing and a miss. Now I place it on the...

I love my Fireboard. It allows me to share my cooks with my friends and add notes/photos. Here is today's cook: https://share.fireboard.io/AEC52D

Weber 22" Kettle as an electric smoker.

Yesterday I went to sweep the ash and the sweep arms stayed in place and the arm spun around. But in the photo, you can see the propane igniter hole is showing signs of age too.

Weber 22" Kettle as an electric smoker.

Thanks, Chopsaw; I was hoping you would reply. I read that you were doing something similar. I like your approach a lot. Unfortunately, my 27-year-old performer rusted out at the center of the ash sweep. :-( So I might cut into it... Fortunately, I have another blue one I use for my daily...

Weber 22" Kettle as an electric smoker.

Hi fellow SMF members. First post, but a long-time lurker. I've been learning a lot in my quest to smoke meat. I am focused on sausage and snack sticks right now. I am repurposing an old Weber Performer as a smoked sausage hut. I purchased the Onlyfire Extention, which allowed me to hang the...
