Team... it does not look good. After clipping this weeks coupons I read the terms and conditions for each. It would appear the most (not all) are now regional or store dependent. The new T&C's would exclude me from the better coupons. Please double check me. It's a sad day.

Well... the meat has been smoked, cooled in the refrigerator overnight and sliced. Still need to vacuum pack, but for now it is chillin' in the refrigerator.

I picked up some pork loin last night. I would like to smoke it next Saturday (7/27)(along with the other bacon I am making). Do I have enough time (~7 days) to cure it if I use the 10% injection method? Should I bump up the salt level from 1.5% to speed the cure time. Maybe 1.7-2%...
No, it was the standard Kroger house brand. Put the coupon in your app and click on it. It will show you what it applies to. And in this case it is the Kroger brand. See the attached photo for reference. ...and I agree it never worked for me in the past either.

I went to Kroger tonight to get some milk. While there, I scanned the Kroger Chuck Roast in app and the coupon was recognized. I have every reason to believe the discount will apply at the checkout. I will be getting some on Friday.

I have this same exact setup. I vacuum out the ash from the burn pot in my Yoder and set it for 150°F for ~5 hours. Works great. I make a 5lb batch 2x a month. Starting with a clean burn pot helps ensure it stays lit.
I find it kind of ironic that I am making English breakfast sausage on the 4th of July.
