Can I do Canadian Bacon in the pellet grill?

Mine is coming out of the brine tonight, I am planning on doing it tomorrow afternoon. I usually do it in the electric but was thinking about trying the Rec Tec pellet grill, it should go down to 180° but that is about as low as it will go. Any problems doing it at this temp until internal is...

    "Sous Vide" Discussion

I did  my chicken today, it turned out very good , moist, tender, flavorful, not much color, it all cooked together but fell apart easily. This was a piece of chicken breast that I cut up, and put in a bag, put in some rooster sauce, agave nectar, mrs dash and cooked at 145° for about 50 minutes.

    "Sous Vide" Discussion

This is my set up for now to see how I am going to like this type of cooking, plus the GF has to like it also. Have only made a couple of things so far. Just put it together last weekend, still need to find an enclosure to put the controller in.

Pulled Pork Without Foil for the First Time.

Looks great and fantastic job on the video. The nice thing about 10 hours in the oven is you get some of the smoke and pork smell and it helps heat the house a it when it is cold out. Oh and not that it matter or anyone cares but I have never foiled a butt except at the end, I usually lay a...

Received my AMNPS today with "q-View"

When I got my tube from him I turned on my gas stove and the exhaust fan, a pair of tong and in less than 5 minutes it was cleaned of all the oils and such. probably do the same with the propane torch. I have a tray and that is the way I did it also. I use both of them in my smokers depending on...

    Dried Beef (Cured & Smoked)

Good looking and nice detail as always Sir. I have not made any of this in a long time, and what a deal on the meat. Is that a Mod 89 you are dispatching squirrels with. A guy in one of the pistol leagues I used to shoot in had one. Very nice piece.

    First meat loaf.

Good looking meatloaf you have there and like the smoker's attire. I use rolled oats as well, a guy at work uses corn flakes. I like to run my veggies, peppers, onions, celery, carrots through the ninja chopper to almost liquify them, it seems to help make for a moist meatloaf. I also use eggs...

Meat loaf with no pan ???

The pan I used had no holes in it but there wasn't a lake of juice there was just some stuff around it that was kind of coagulated.

Meat loaf with no pan ???

The last one I did I laid it on a foil tray, not a lot of juices come out of it. I ran my celery, carrot, pepper and onion through the ninja and made it pretty fine before adding it in. It made it very moist and great flavor with 2 eggs Tatonka dust and some oatmeal.

    The BUTT Foamheart

That looks fantastic and the all the details are great to read. I am not to eat bread and starches but home made bread I can't help myself. Had I made the rolls I may have added a bit of what I rubbed my butt with just to marry the 2 a little more.
