Yes give or take a few minutes, to get the skin nice you really need to finish above 300° I try to stay 325-340° because if you get much hotter depending what you season with the seasoning will scorch or burn. These were not really crisp like a fried wing but the skin was nice it wasn't tough...

I am taking out of the brine, wanted to do it last weekend but that didn't work out so tonight it is.
Not wanting pulled or shredded, so cook to the 155-160 range.
I think I am going to leave the skin on to smoke, going to be doing it in the cookshack electric as it is easier than the pellet...

Mine will do 500 if I take out the drip pan and the diffuser, I put on one of the charbroil diffusers it seems to help keep the ash from flying around, and use the grill grates. It is up to the 500 in 10 - 15 but all together no luck so far. I have spoke with Ron several times we replaced...
