I would do a little research on the cure before you use it. The times that are thrown around here are for Tender Quick so it may be different with that product. Better to cure for longer than to "under cure"..

I don't use apple juice in my water pan anymore because I don't think it added to the taste at all. I tried once without it and it tasted the same so I don't waste the juice now. I do spritz every hour with apple and pineapple juice.
I do put a water, a little minced garlic, and an old beer...
Looks very good. Points for the ABT on a cracker idea. It would make a great Hors D'oeuvre (sp.?). I can imagine making like 20 of them and once smoked cut them into three pieces and placing them on crackers. Never thought of it until I saw yours!
