I think I may have a problem. Is this an early warning sign? - Q-View added

I see that you are on west coast of Florida.  I have fond memories as a child (pre-teen) when we lived in Brooksville.  My dad used to take me fishing in the gulf.  He always went with a guide out of Homosasa Springs called Leon.  Leon's boat wasn't all that big so it was just him, us and at...

    Poultry Brine w/out sugar

I'd be a little bit leary of that.  Many sugar substitutes are fine when added to dishes at the table, but do not work well in cooking -- which might include smoking.  He could try it -- but I'd say to follow the other recomendations and just leave it out.

Three Kinds of Ribs (good score too)

I've never seen them at our BJs.  What I have seen are cryovacs of various boneless beef cuts (rib roast, top & bottom round, tenderloin, eye of round, etc.).  In pork they have spare ribs, picnics, boston butt, boneless pork loin and baby back ribs. What I have never been able to grok is the...

Smoked salmon -- a lesson learned, plus Qview.

I used a brine of 2 quart water, 1/2 cup brown sugar, 1/4 cup kosher salt for the fish.  Had a little left over and tossed a handful of "pickling spice" in for the pork brine.  Pickling spice is a McCormick product that we buy in bulk 12 ounce containers from Sysco or BJs.  Ingredient list is...

New A-Maze-N Smoker, and a few questions

I agree with what distre just said -- we did one cheese smoke where a block of cheese dripped cheese oil onto the AMNS.  It did not like that very much:-}}  Either make sure it is not in a drip zone, or tent it.

    Tender Quick in Canada

I would not give up looking locally -- and would not rely on the Morton product locator.  I just tried it for my zip code.  It did not give me the SS coop I mentioned where I just bought some.  It did tell me to go to Wegman's and Weis, neither of which would help you since I doubt that they are...

Almost $40 worth of food down the drain!!

The only bad smoke I have had was way back when I was using a charcoal R2D2 Cajun smoker.  I used peach wood gotten from a local orchard, put on top of the charcoal.  The food tasted like you described.  There were many possibilities.  The branches might have been treated with pesticides.  The...

Looking for a source to purchase wood (Athens, Georgia area)

Yesterday, I was in the local Lowes store and they had bags of wood chips at a not bad price.  They are a pretty big chain so you might find one in your area. Hardware stores here also stock wood chips, both Ace and Service Master.

Three Kinds of Ribs (good score too)

You got some good looking meat there.  The chuck roasts are quite good looking, versus the boney and fatty ones the stores often try to sell.  When ever I see one like that I like to grab it even if I don't know what is going to happen to it.  Might end up in curry, in chili, or as Yankee pot...

How did you come up with your screen name?

Mine is simple.  Most sites will not take my actual name (dale) and I got tired of trying dale1 , dale2, ....  so tossed my street address number onto the end. Back when my son and I were in Indian Guides (30+ years ago), I took on the name of Fuzzy Bear.  My beard was reddish brown then, but...

Smoked salmon -- a lesson learned, plus Qview.

It was on the smoker for about 2 1/2 hours.  I was having trouble with the controller -- kept shutting down.  So it might have not been full smoke for all that time.

MES 40 with Remote (Christmas Present)

Good job, and a fun post. Looking at that driveway -- do you have a two-stage snow blower?

    Tender Quick in Canada

Here in central Maryland, I have trouble finding Morton's Tenderquick in the normal grocery stores.  I have to go out into the country to a place called Southern States, which is a store that caters to farmers and horsemen.  Perhaps you could look for a similar type of store in your area.

which cut do you prefer..picnic cut or boston bit

    At our local BJs warehouse store, butts are $1.49 and picnics are $1.39 -- not much difference.  The picnics also have the skin still on.  Whether that is good or bad is cook's choice:-}}

What is up with the MBS 40? Getting hard to find.

For those looking for other sources of Masterbuilt -- we were in a Lowes today and they had one MES30 in a box priced at $179.   Didn't see any MES40s though.

Smoked salmon -- a lesson learned, plus Qview.

That is why I said use moderate setting on microwave.  On high, it would cook outside before inside gets warm -- but on low to moderate it heats it more gently. Thanks.   I quoted the original source -- a book we picked up on a trip to Alaska a while back.  Of course, my wife will tinker with...

    An A-Maze-N Review

I've made chile verde several times -- but it never occured to me to make it with smoked ingredients.  Is it safe to assume that you use smoked pork in it as well?

dry aged ribeye - results are in

Looks good.  I really like good prime rib roast. A few weeks ago we were on a cruise ship up the New England coast and to Nova Scottia.  One meal had prime rib on the menu.  We ordered it and asked for as rare as possible.  What came out (for both of us) was a piece of meat that had about 1...

Charcoal vs Electric - Newby Needs Advice

I had what is essentially the Brinkman 10+ years ago and used it until it rusted out.  IIRC, cost back then was about $30 and I certainly got my use out of it.  I think it was called a Cajun Smoker -- I called it R2D2 because of the way it looked.  I would use charcoal and hunks of wood -- often...

Full Smoker with Q-view, very long and pic heavy

Very nice post -- a lot of food of many types. My only question is: How many people are you feeding with all of that good looking stuff?
