My son is deployed to a country in the Mid-East on the Gulf. He said that his office mates voted for jerky, so you're making a good choice.
Todd collected a number of addresses for his Christmas care packages, you might PM him to see if he'll share with you.
Someone posted a message about...
Here is a reply (mainly for Todd) from my son who is deployed to a small country on the gulf in the middle east.
Written 29Dec10.
So special thanks to Todd and to those who sent him things to mail out.
BTW, for anyone who has a distant relative -- especially someone deployed, SKYPE is a good...
Depending on the browser you are using, there may be an easy answer. I use IE8. It has tabs. The way that I process the message threads is to do a right click and say "open in new tab". That leaves me exactly where I was in the main listing. In fact, I usually open a number of threads, all...
The two times I have done pastrami, my MES quit on me part way through and I had to foil wrap and finish in the oven. Both times, they turned out very good. Tender and tasty.
That may say something about foiling on smoked meats:-}}
We buy most of our bulk spices at BJs or Costco. They come in large containers, about 16-20 ounces depending on the spice. Cost is under $10. Much better price than the small jars in a grocery store.
Someone here once commented about cutting up woods with a chain saw. Most chain saws need oil to keep the chain blades from binding up. He suggested using a vegetable oil rather than motor oil.
I used to have a charcoal smoker -- what I called R2D2. At the time its name was Cajun Smoker, today same thing in a Brinkman. I enjoyed it, and it did not cost much. The disadvantage was lack of heat control.
I've had a MES30 for just over four years now, and really like it. The electric...
On my machine, the power connections are in a box on the bottom and it has an access panel. Take a look and see if you think you can put a new cord in. You should be able to see where the three wires go, and how to connect them. They might need female connectors to slide onto male spades. If...
How bad is it?
I damaged my door a while back. I put something in on a pizza pan that was about 1/2 inch bigger than the inside diameter of the box. It sprung the door to where it had about a 1/4 inch gap in the seal at the upper hinge. I could see where the metal casing of the door had...
That box is a neat idea. What temperature did it get inside. I had been contemplating something like that to do cheese -- but then I discovered the A-Maze-N smoker and have not looked back at any other way to do cold smoke.
I have a MES30, and have liked it for more than four years. Although it has had problems (connections to heating coil burning out, controller went bad after four years), if this one died completely beyond repair, I would get another MES -- probably a 40 inch model.
Decent food grade buckets to hold things like pork shoulders or ribs while you brine them. I use very large tupperware, and put them in a spare fridge overnight.
A-Maze-N smoker -- best way to do cold smoke (only way IMO).
Vacumn sealer (we have a food saver brand). Get lots of bags and...
There was a thread a short while back about the unit not heating up outside in the cold. Something about the thermostat (small silver circle on the inside of the box) needed to be warmed up with a hair dryer. Don't know if that is relevant to your situation or not. You could test if it is a...
