I didn't take this as the builder was getting raked over the coals so to speak. The UDS (BDS) certainly produce great results. His prices are rather high but to each his own. I think there is a smoker for the right price for everyone and allot of folks love the UDS and if some are willing to pay...
Give it a try and see what come out of it. Some of the attributes to a tasty bark do come out of the spices (rubs, mustard, brown sugar etc). That said I have nver done one without spices and you never know until you try.
