Liquor in BBQ/smoking. Cognac, whiskey, beer, brandy, etc

I use bourbon in some sauces, spritzes and with apple juice when I foil my ribs. I prefer Evan Williams for cooking. I save the Makers and Blanton's for the cook- they actually don't work as well in food anyway.

2 Stage Pork Spare Ribs with lots of Q-View

Great looking smoke and great idea for doing a lot of the work ahead of time. We used to go down to the smokies and rent a chalet- it was an awsome time. Give the mountains any time over the beach!

Masterbuild XL Mods - Post your mods here!

The phone number for Landmann is 877-347-4557. I ordered the wood box and lid for $14.00 and $10 shipping. Make sure to order the wood box for the 3605BGD.

I like the trivet thing because it would negate having to drill holes. I think a bigger water pan is a must- it helps with heat recovery in my opinion and recycles the smoke and dripping flavor in the smoker as it boils. I don't want to give the wrong impression- I like the smoker. There are...

Masterbuild XL Mods - Post your mods here!

Update- fired it up with 2 large soaked hickory chunks and filled the pan with 1 gal. water. It took a little longer to get to 250, but I think that was because of the water. I had thin blue smoke and am now happy.

Masterbuild XL Mods - Post your mods here!

I wanted the bottom of the box to end up about 2 inches from the lip of the burner. After a lot of calculations I came up with 4.75 inches- the rack hangers sit .5 inches below the hole after they are installed, the bottom of the wood box is 2 inches below the rack, and the lip is 1.5 inches off...

Masterbuild XL Mods - Post your mods here!

Darth- After this weekends smoke I had to mod this baby. I had 2 main issues- the wood chip pan and the water pan. The mod I did isn't particularly easy and I haven't fired it up yet, but here it is: In looking at the stock wood chip pan, it sits right in top of the lip for the burner. This...

Masterbuilt XL Wide Smoker Owners: Air Flow Issues?

The aluminum foil method works; however, the foil sticks to the pan, so when you want to put a new packet in you have to pull the entire pan out with channel locks and use tongs to pry off the old packet. A real pain.

    Squirrel and Chuckie engagement announced....

That chuck looks awsome! I love the roasted garlic idea- I assumed you smoked the garlic? I was thinking about smoking several heads of garlic and using the cloves for smoked garlic butter and smoked garlic infused olive oil. By the way- there are plenty of great decaf brands on the market now.

First Smoke in Masterbuilt XL w/Qview

Agree with the shrinkage- It's kinda like buying penuts in the shell at the ball game- they taste great but it's too much work for what you get!

First Smoke in Masterbuilt XL w/Qview

Scarbelly- I was a little shocked at how much those ribs shrunk. Don't know if I would do these again even though they were tasty. T Johnson- If you are referring to the thermo reading, it was pretty accurate. As far as keeping a consistent temp it did well, but the recovery time after you open...

First Smoke in Masterbuilt XL w/Qview

Took everything off about 5:30- probably should have taken the chops off earlier but they were ok. Didn't have time to get pictures plated because we had freinds coming over.
