I use bourbon in some sauces, spritzes and with apple juice when I foil my ribs. I prefer Evan Williams for cooking. I save the Makers and Blanton's for the cook- they actually don't work as well in food anyway.

I like the trivet thing because it would negate having to drill holes. I think a bigger water pan is a must- it helps with heat recovery in my opinion and recycles the smoke and dripping flavor in the smoker as it boils. I don't want to give the wrong impression- I like the smoker. There are...
Update- fired it up with 2 large soaked hickory chunks and filled the pan with 1 gal. water. It took a little longer to get to 250, but I think that was because of the water. I had thin blue smoke and am now happy.

The aluminum foil method works; however, the foil sticks to the pan, so when you want to put a new packet in you have to pull the entire pan out with channel locks and use tongs to pry off the old packet. A real pain.
That chuck looks awsome! I love the roasted garlic idea- I assumed you smoked the garlic? I was thinking about smoking several heads of garlic and using the cloves for smoked garlic butter and smoked garlic infused olive oil.
By the way- there are plenty of great decaf brands on the market now.

Took everything off about 5:30- probably should have taken the chops off earlier but they were ok. Didn't have time to get pictures plated because we had freinds coming over.
