Smithfield 12% cured spare ribs - Purchased in error, need advice

Alright guys, I'm leaving this one to you.  I was searching and searching for spares toady and couldn't find them.  Usually I find fresh spares at my local Fareway, but they are out until Friday.  I went to Walmart (ouch, I know) and I figured I would see what they had, found some Smithfields. ...

    Uhh Ohh..Input Please!

Yeah, they are being pitched.  IT had to be greater than 50 degrees for the past several hours.

    Uhh Ohh..Input Please!

So, I'm pretty sure I already know the answer to my questions, but I have to ask to make sure. I bought some frozen chicken wings/drumsticks yesterday and had them in the sink to thaw, as I was planning on smoking them today.  Ohh, we wake up this morning and realize the we never put them in...

First Time to do Baby Back Ribs

I foil with juice for the 2nd 2 stage, and than the last hour out of the foil is when I baste or glaze mine.  I do not like them saucy, so I do not add any sauce or any glaze after they are out of the smoker. My typical glaze has enough sugar in it that it carmalizes nicely and makes them tacky...

Some help with ribs on a MES30

Also, I did 3-2-1 with some spares, and mine were fall off the bone and a little dry.  I will NOT be cooking mine with that same method next time, but something similar, not sure what yet though!

Some help with ribs on a MES30

When you foil, are you adding any liquid?  Are you basting the last hour out of the foil? What temp are you running?  Are you reading off of the therm on the smoker or a digital one? When are you seasoning your ribs?  How long before the smoke? Is the smoker getting up to temp before you are...

    First whole chicken

I put my probe in a potato for most of the smoke.  It gets the probe off of the grill grates and helps get an ambient air temp inside the smoker.  After that, I check temp in the breast.  Mine came out a little dry today, disappointed to say the least!

    First whole chicken

No worries there, and hell, I didn't buy the chicken!  Family friends have quite a few free-range birds.  We help with butchering, we get a few for free.  I guess I shouldn't say "we", my fiance helps, and her mom, and then we get free chickens.  And let me tell you, they are pretty damn tasty. ...

    First whole chicken

Hey James!  The WSM is a great smoker!  I am also doing a whole chicken today and am looking at IT of 165-170 in the breast at the end.  I will be using hickory and be supplying smoke until the bird is done.  I'm not sure hickory is "rough" for chicken, but my assumption is that it is going to...

    MES 30"

My brother-in-law is looking into this smoker -  - but it says that it doesn't get past 250 degrees. I run a WSM 18.5" and have no experience with electric smokers. Can someone give me some input on this, if they can run hotter than 250, or if there is something comperable to this that would...

How long will I survive without?

Shoot, I'm 24 and haven't paid for cable in upwards of two or three years!  Netflix and Hulu (combined cost like $15.xx a month) give me plenty of things to watch without the $75-$100 price tag that comes with Mediacom, Dish, or DirectTV! Yes, I had to edit because I said I was 25 and I'm only...

    Sunday Spares - QView!

Thanks everyone!  They were a bit over cooked for my liking, but it appeared my guests and fiance liked the "fall-off-the-bone" tender ribs.
