Is it possible to reverse the tongue and then lower the firebox. If so then that would be easier than lifting the whole thing and reversing it, I would think. However if you need a bigger firebox then you may need to raise the whole thing up anyway.....just a thought.

I used to think brining was a ridiculous waste of time and unnecessary. Welllllllll...let's just say I almost refuse to smoke a chicken or chicken part that has not been brined since I tried it. I also spatchcock them too, so I guess you both win..........or lose.

I am sure you have but I have to ask, have you tested them side by side in boiling water. One may need to be calibrated if you haven't checked them. Just a thought.
If you are gonna use it all at once you should be fine, the turbinado is drier than brown sugar so if you are storing it then I would suggest turbinado. I would at least triple it for a 10 lb brisket maybe even quadruple it, that recipe should make about a third of a cup of rub if my rough...

Some good advice above.
When I am coming up to temp I usually have two vents fully closed by the time I get up to 200*, and the third is only open about 10-25% (depending on weather) by the time I get too 215*, upper vent is always open all the way. Usually following this the WSM will cruise...
