Doing two whole spatchcocked chickens tonight on my new ECB. I've used it to grill some chicken legs, some beef medallions, taters, baked beans and some chicken breasts so far this week, but I haven't done a smoke on it yet.
Just wondering if there's any suggestions or tips on keeping temps up...

Thanks! I love this time of year when the in-laws send my better half home with veggies from the garden. Everything but the chicken leg was from their garden. Did the taters on the Q, steamed the carrots and boiled the corn.

Just seasoning up a new ecb that I picked up in Grand Forks this weekend. I guess when you have more than one smoker that means you're starting to take it a bit more serious, huh? Figured I'd start with a cheap one to test the water with charcoal and see if it's worth investing in a good one...
Ok update to this situation...
Flames are heavily orange. They start out blue at the burner, then go orange pretty quick... That's not good. I switched tanks out, tried Jack's tip above too...
Sticking at 225F was a chore...
Time to try a new regulator I guess...

I ended up using a patio table umbrella like 7' wide and had it over the whole smoker. I was able to add chips and water in the pan, etc. and stay out of the rain this way, and my thermo was safe from the rain too.

They're calling for steady rain tomorrow and I've got a smoke planned for me and a couple of the guys. We're just doing some baby backs, side ribs and some chicken thighs at the cottage.
I've got a GOSM type smoker and I've never used it in the rain. Will my temps be effected by rain? I don't...
I'm yet to brine any of my yard birds... Your brine looks great with the pepercorns and oranges (at least that's what I saw...). Is that a secret brine or can you fill us in? I'd like to give brining a bird a go next time.

I made fresh brats last winter and the castings I used didn't seem to have the same snap as smokies have.
However...
When I made peperoni and jumbo snack sticks using the same castings and smoked them. They got more snap, so smoking them must firm up the castings a little and allow for that.
