Yep, it's Cheese Smokin' time here as well. High of 50* today. I've never used PMC for cheese, always been a Cherry man. I'll have to try it! Getting ready to do some Parm and Asiago. Can't wait to hear about your results. The MB mod is great.
It you're into alcohol or atleast the flavor, add some Ouzo to a spray bottle and hit them with a blast during basting! I always hit mine with some Jack. Jack on the BONE!

I shredded some of the Asiago lastnight. I'd have to say this has been my favorite thus far. I love Asiago, and to have it Smoked really takes it to a new level. Here are some of the pics. I was pressed for time, so I had to use my phone for the pics.
