In away I am glad, that way I didn't end up regretting the purchase, just because I got a deal on a unit. I bought my first and only KA mixer in Nov. 2015. Its a Professional 600, 575 watt, 6 quart, metal gears. All I use it for is pizza dough, and its made a lot over the years and got 25lbs of flour coming in today. Still works like day one. Totally worth having any KA stand mixer, they just...- Flatrate

Mustard or no mustard
I usually use mustard as a binder on most things. As for spraying my rule is if the cook is going longer than a few hours I'll spray every so often with straight AC vinegar. Dave- Flatrate
