    This smoker is pretty notorious for running hot. Some type of needle valve will usually take care of this issue. Search the site for modifications for the Masterbuilt, there are a lot of ideas here.

    I have the same smoker and recently placed sand in the water tray. I have only done a couple of smokes with this mod but it seems to work. Temperature seems much more steady, no chasing the temps and no refilling the water.

    This regulator is a bit tempermental and takes some time to find the sweet spot. I suggest starting with your temps a little high and then adjust down. Try not to chase the temperature during your smoke, it will make you crazy. Just adjust so you have a nice even flame from the burner, also...
