    Dirtsailor, thanks for the info. I am using a Bayou Classic 0-30 psi adjustible regulator. I like the idea of the needle valve and regulator set up you are using, may switch to that after I give everything a good cleaning.

    I don't like falling off the bone either, better with a little bite to it. I did foil for about 1 1/2 hours then finished on my grill because I started having issues keeping the burner on the smoker going. It kept going out like the propane was out but it was a new tank. Maybe my regulator...

    Three racks of St. Louis cut spares on the Masterbuilt. Rubbed with modified version of Jeff's Rub, cherry and apple chunks for the smoke. Probably going to foil at about the 3 hour mark.
