Somewhere on the site is a finishing sauce for brisket by Rivet that I know a lot of folks have tried but never tried it myself.
I'll see if I can track down the link when I get a chance but hopefully someone else will know what I'm talking about and be able to link it to you.

It would work but like you said it might take a while but make sure you don't use fine ground pepper, it just won't come out the same.
I have never gone straight from smoker to steamer so I couldn't say how well that would work.
If you have time to smoke it then cool it and then steam it all in...

So as stated the blender might not work so well. The bag and rolling pin method would be your best option unless you go out and get a spice grinder. You can usually find them for $20-$30. I don't drink coffee so all I use mine for is spices anyway.

That light I had to go to a hydroponics supply store to get it, Home Depot or places like that won't have these kind of lights, and it makes a HUGE difference from a regular florescent light.

But yes, maple is a great wood to smoke with.
Especially nice on pork and poultry.

What Amish market did you go to?
I have tried (a different brand) of Amish apple butter BBQ sauce and it was great but I have never seen their raspberry chipotle, or anything with chipotle in it for that matter.
Was beginning to think the Amish didn't believe in...
I agree it goes great with cream cheese.
Took some recently and made some ABTs with cream cheese, jalapeno jam and a little mozzarella for texture and they were great!
You could also add it in a fattie or make a wing sauce with it.
