    White furry mold help!

Left the fat on because fat is delicious, but I don’t think it adds anything here, I’ll trim better next time, but flavor and texture of the whole thing is wonderful!

Perfect, that’s what I thought, but wanted to double check. Thanks again Dave. Here’s the obligatory pic. :)

    White furry mold help!

I have some cured tenderloin that came out great, did with 3% salt, and cure #1. Light smoke and aged for 2.5 weeks to 30% loss and it was great! But I wanted a touch more smoke, so I bagged it up and here I am 6 days later to finally smoke it do to all the snow storms and it has a few specs of...

Belly Prices in Neck of the Woods

Thanks guys, 2.99 def sounds better. I'll update once I get to Restaurant Depot. Alternatively we have some local farms with heritage breeds, those are 10-12.50 a lb though! I will experiment with them in the future, but for everyday stuff that's too rich for my blood.

Belly Prices in Neck of the Woods

What is everyone seeing for Belly prices locally? I'm in CT and just stopped by a local butcher, they wanted $4.99, same as the Asian grocery. Will be heading to the Restaurant Supply place this weekend. Haven't bought belly in awhile, but that seemed very high to me.

    Cure chamber build questions

Thanks brother! I’m new here, but very active in other forums. I’ll try to post more documented stuff soon. Hopefully I can add instead of take in the near future.

    Cure chamber build questions

Was at hardware store and found these bars for hanging shelves. They should be perfect, have holes evenly spaced throughout for hooks and the shape will help hold more weight and keep them from sliding/rolling. They were < $3 for 36” to boot! Here’s a pic of the whole thing now. Needs...

    Cure chamber build questions

Perfect, that’s what I was thinking too. The one in there now I wiped with a bleach mix (1 tbsp to 1 quart) then rinsed with vinegar and dried thoroughly before using.

    Cure chamber build questions

Figured it out, the damn thing is leaking!! The underside drips every 2-3 seconds! The back wall of fridge still has condensation, but I figure this is probably very minimal.

    Cure chamber build questions

Fridge is on the inkbird. Not sure how often it turns on. When I open the door it does. Other than that I would think a couple times a day maybe. No obvious heat sources anywhere. You can see on the back wall where there’s frozen water and dripping. It’s where the cooling lines run behind the...

    Cure chamber build questions

There is, I pulled the drip tray thinking there wouldn’t be a need, put it back, but still this isn’t sustainable if I go through a gallon a day. What can I do to help alleviate the issue, run fan on wall when fridge kicks on? Do others have this issue?

    Cure chamber build questions

Set everything up last night, looked like it was working so I moved my meat in and now I have a problem. There is a pool of water in the bottom of the fridge and the humidifier has gone through almost 2 litters in 12 hours. It appears the back wall of the fridge where the chilling happens is...

    Cure chamber build questions

I have a reptile humidifier I’m going to eventually pipe in (thanks Dave for the idea), but for now I’ll see how it all runs inside until I need the room. I’ll get a desk cord grommet for the wire hole and remove the door panel and replace with a plastic sheet. I’ve seen those fancy one way...

I got the Inkbird ones you see on Amazon. Everyone seems to like them. $75 for the pair.

    Cure chamber build questions

Hi all. Building a cure chamber from a 4.4 cu.ft. mini fridge. Is it advisable to use wooden dowel for hanging rods? I could use stainless steel or aluminum rods, but it would be more expensive and slightly more time consuming so if wood is fine I’ll just do that. Also, I have an 80mm low cfm...

    Cooking with cure 2?

Chop, did you use #2 in the umai bags? Umai bags are meant for refrigerator use right? Cure #2 doesn’t activate until 50F or so as I understand. Just trying to figure out your method, I’m new at all this all this curing stuff!

    Cooking with cure 2?

I am wondering what the conclusion is about cooking meat after using cure #2? I know that cooking nitrates creates nitrosamines, a known carcinogen, and is a widely accepted no-no. That said, if left long enough, nitrates break down to nitrites through the enzyme nitrate reductase. So if the...
