My budget would be around that $1100 CAD mark. I usually smoke around 250 so the lower temps in the chubby aren't a huge deal. I guess my only other crutch is size, I don't do huge cooks but I'd like the option to do multiple meats at once.
Alright, so my broil king vertical is no more, hate my pellet smoker so I guess that means its time for something new and shiny. I ideally want an offset smoker but they don't seem to be in my price range unless I'm looking at a COS like a OKJ, which are nice but I don't want to be babysitting...
I guess I should say I seperate the point and flat before smoking, smoker isn't big enough for a whole brisket. Does cooking a brisket longer dry it out though? I pulled mine early to try and avoid the dry. Also, the drip pan was damn near dry...

Flat was sadly dry, not sure what happened.
I wrapped at 160 with peach paper, left it on until 185 and rested it for 3 hours in a cooler.
I had a feeling I should of pulled it earlier, the probe was going in like...
I couldn't get a controller in time, I'll be ordering a pitmaster out of the states I think. I'm just going to go for it. I've done alot of reading and I'll just monitor temps and probably stay up all night watching it haha. I'll let you know how it goes

Former gasser here, just changed my broil King vertical smoker over from propane to charcoal. I'm looking to do my first smoke on it this weekend. I might be in over my head but I bought two 16lb packer brisket's. I plan on smoking them for 16 hours or so, the points anyways

Anyone know of a Canadian dealer? I've decided to fire back up my vertical charcoal smoker and I'd like to try a DigiQ on it but the website wants to charge 90usd for shipping and import fees.

I love my charcoal smoker but the wood chips burn through so fast I have trouble keeping the smoke rolling.
I did just find a local Backwoods smoker dealer though, I'll be looking into them for sure.
I've got a broilking vertical propane smoker, and a converted BBQ to offset smoker. For reading temps I've got a thermopro TP20 from Amazon.
The broil King is nice but I hate the long smokes, I did a 14 hour brisket last summer and hated checking on it every 45 minutes. Maybe it was human...
