Okie Joes Highland - REVIEW AFTER TWO COOKS....

Thanks for for the tips folks! I would have the chimney closed a bit after i threw in a chunk of wood for smoke wanting to make sure the cook chamber got thoroughly smoked out. I thought there was a throttle and brake on both ends!   So...WEEK 3 and the 3rd smoke.   Another rack of ribs, pork...

Okie Joes Highland - REVIEW AFTER TWO COOKS....

Hey GoNavy,    I'm real happy with the way the temps are working. I feel like the firebox basket is a "MUST HAVE" to keep the coal bed together. I drilled a 1/4" hole right around the bend from the left side of the shelf where the transmitter sits. It works great. One the first things I did...

Okie Joes Highland - REVIEW AFTER TWO COOKS....

Hey SmokeyJobe!   The fire basket was made from expanded stainless steel metal and steel angle. With all that heat in the box that was an issue but the chimney extension is galvanized but there's no fire in the cooking chamber and I never let the heat get over 275. I feel confident that it...

Okie Joes Highland - REVIEW AFTER TWO COOKS....

Hey Folks!    I thought this needed a review posted after two cooks. Well, three counting the seasoning fire. I can't be more pleased with the way everything turned out. I did the addition of the gaskets, hood thermometers and home made baffle out of .080 alum. and fire basket (see pics below)...

    Destroyed three pieces of meat

Thanks for the input and encouragement! It's not a total loss. I'm going to throw everything covered in the oven with a half a beer (I'll drink the rest ) to bring It back to life. The flavor is there, texture, not so much. All the veggies (potatoes and peppers) turned out awesome so I can't be...

    Destroyed three pieces of meat

Hey folks. First cook with my new Highland yesterday. Everything seemed to go well temp wise. New set of thermometers (tested). Baffle plate installed. Had about 20 difference from side to side still. My general plan was. Tri Tip - 225 - 240 degrees approx 2 hours. internal temp 135 degrees...

Oh the wheels are turnin' hard on what to do first! Thanks to my lovely wife to keep me in check, we're probably going to do a pork butt, turkey breast and maybe throw in a small rack of ribs. Also going to throw on some peppers from the garden. Here's a pic of the seasoning. I was pretty...

2 1/2 hours into seasoning my Highland

Hey Folks!   Well today is the first day of firing up this thing. Started with about 1/3 full of charcoal basket full of Kingsford topped off with a Weber chimney of hot coals. I opened up the firebox at 1 hour to throw in 2 wet and 1 dry chunks of hickory an it's been rock solid at 275-290...

    Fire box basket question

Howdy Everybody,    I had a friend make me a SS basket for my Highland. I had him make it 11"x 11"x 6" as opposed to 10"x10"x6". I thought the bigger, the better as long as it fits easily. So the one thing I had him do different was weld up the 4 sides of the basket steel angle and SS expanded...
