That's a big discussion right there. Some swear by rubbing a butt the night before, others say it doesn't matter and to rub it when you take it out while waiting for your coals to get hot. The only way for you to decide is to do both and see what you like best.

I'm not big on mustard so if never slather it on a piece of meat, but I do recommend using your favorite oil.

I temp checked them before I wrapped them to let them rest and the biggest one read 162* IT so they might have hit 170* before I served them with the carry over.

I had a spike hit 275, but I averaged about 255 the whole time. I'm normally pretty steady at 230, but today I couldn't keep it down. The more I think about it, the more I'm sure it was the lack of a water pan. The only thing I added when I wrapped them was a half cup of pineapple juice.

I've done 2 butts, one for pulling and one for slicing, haven't foiled either and they've turned out great with a nice bark. If you're not looking for a crispy crunchy bark a foil will help it cook faster.

Thank you B. So far they are looking great. Another hour in the foil, then I'll take a temp reading to see how long the final stage should be. In the foil I added pineapple juice instead of the usual apple to keep with the theme.

I had to go and research these things. From that, I've gathered that these are hybrids, which is good. Based on Burpee's claim of size and sickness free, I had to check and see if they were GMO. They're not and Burpee says that they will never use or sell any GMO variety of seed.
