Lowest I've ever taken the egg was 200 for a long. Brisket smoke.
Not sure how much lower I can go. I could try literally 10-12 briquettes.. and close every vent. Why would be the target temp for jerky...

Cure - will also help with shelf life- though I doubt that's ever much of an issue. It adds a little "jerky". Color to the meat as well
