Plan on recording Pitmasters and not worry much about the game as I flip back and forth between the two.

I generally just leave them alone, the last batch I did was an exception, but only becuase I had a blow out. What a mess........but the end product was fine.
Edit: when I say leave them alone, that is that I don't drain out any of the liquid. I do flip/shuffle them around during the cure time.

I could be full of chit, but I believe that is an option. Seems like a couple of people on another forum I frequent had that done on their new Langs.......short/direct feed from the firebox with a damper in it.

I would encourage you to try the honey cure just for the sake of knowing what it tastes like.........but I would not make a big batch, from what you posted, I would be surprised if it was something that you cared for.
Any difference between "dial o matic" and "spitjack"? I have one from spitjack that looks just like the one in your other post.........never heard of dial-o-matic........curious as to any differences.
Have you broke down and got a Cambro yet? They are great!
