Anyhow, if you decide to trim before hand, just bring the labels off the package the meat came in. I had the inspector ask to see them before.
You can trim your meat prior to the competition, but you can't rub, inject, season, etc prior to the inspection.
I do all my trimming at home prior so I don't have to mess with it when I am out there (aka drink sooner).

Smoking sausage like this has been around a long long time, but the last time this topic came up I did some digging and found a post on 4/20/04.....in a different forum where the name fatty was clearly suggested.
Have yet to see anything older than this for the use of fatty to describe this...
I try not to worry about how many CBJs are out there at an event. Sure I would prefer 100% CBJ with years of experience, but assuming everything is done as it should be, everyone has the same shot of landing on a good/bad table. Myron, Trigg, whoever can get on a crap table and give us a leg...
I have always been a competitive person and this is another outlet for that.
I like the challenge of trying to figure out what the judges are looking for and trying to execute the game plan. I was doing well in Florida then moved North and found that my flavor profile that worked down there...
Kids got a swim meet on Saturday and Sunday, so if I get anything in the smoker it will have to be a quick one. Chicken maybe.......

Like with most things in this BBQ world, you can ask 10 people and find 10 ways to do it. You need to find what works best for you.
I can say with a high degree of confidence that you don't want fat going into the turn in box whether you trim it off pre or post cook. There may be judges out...
