    Cottonwood?

I suppose I should have been a little more specific in what I was looking for. I was really hoping to interact with somebody who has used it themselves to get a little more detail than that. If nobody on here has, then I'll have to be the first.

    Cottonwood?

Anybody have any opinions on it? I have a cottonwood forest behind my house, so, from a supply standpoint it looks really, really appealing. You know, walk back there, find a few large downed pieces, throw them over the clear ditch and then over my fence. I've cooked with it over an open pit...

Cherry wood, I am beginning to think never again...

I've not tried cherry, but I really do like peach. The smoke smells wonderful all on its own. It's almost a sweet toasty aroma. Then again, I have peach trees that get pruned every year.

    "Frank" beats Sweet Lucy's Smokehouse

There's a flip side to that as well. Something like a brisket is going to be safe to eat long before it is good to eat.

    "Frank" beats Sweet Lucy's Smokehouse

He was talking about pretty much everything. I imagine that cooking by temp when you load some big industrial beast up with 25 butts and 25 briskets would present a challenge all in itself. I know that some on here do chicken by time, but they've also done enough chickens to know how long to...

    "Frank" beats Sweet Lucy's Smokehouse

I was getting some (uncooked) brauts at a local store that makes them fresh every morning. One of the guys who works behind the counter used to work at a nearby bbq joint, so I asked a couple of questions. One of the questions that I asked was whether they cooked by meat temp or if they went...

    A Maze N newbie

Well, I purchased an ET-732 from him because of the interactions that he had on this site with other people regarding transactions, including interactions dealing with possible faulty equipment. I got the thing quickly and I am a satisfied customer. I've seen more since that tells me that I...

    Favorite Beer

Favorite? It'd just be easier for me to tell you the ones that I don't like. Schlitz. Budweiser. Not Bud Light, but Budweiser. Ska's Pale Ale. (I like a hoppy beer every once and a while, but I don't like the flavor of straight hops.) I can drink those beers, especially if they are free...

    A Maze N newbie

From what I've seen so far, Todd seems like the kind of businessman who is actually concerned with customer satisfaction.

Rough smoke experience...but I still ate well anyway

I can't find my camera :102: However, half of it is now pulled and in the fridge and the other half is in the freezer, prepped so that I just need to pour in a little apple juice and throw it in the oven for a reheat. It'll be gone before the week is out, I'm betting. The bark is thick and...

Rough smoke experience...but I still ate well anyway

Pulled it just before 2am. Gotta go to bed. It's the most tender pork I've ever had, but after almost 18 hrs, it had better be. I may have to wash some towels tomorrow, because I'm gonna make sure it hasn't been out of the pit for more than 6 hrs before it has been pulled.

Rough smoke experience...but I still ate well anyway

I picked up a butt last night that was just slightly over 7lbs last night and had planned on throwing it in the pit early this morning. I figured that if I got it on at 7am, there was a chance that I could have it for dinner tonight. If not, I had some beercan chicken that I had made earlier...

    Wind, wind, wind

SE NM? The whole state. This is the windiest spring that I can remember and it is the driest beginning to a year on record since 1897 for the state. In spring, dry and extra windy tend to go together. If you can, find an area that is a little more shielded and you might be able to control...

    Cocoa Shells for Smoking?

I don't know. My concern would be whether or not the smoke is toxic. Verify that it isn't (you can eat chocolate, but burning stuff can create other compounds that may or may not be bad for you,) then get something that doesn't cost a lot or take a whole lotta time and try that if you cannot...
