First Chuck Tender Roast with AMNPS

I picked up a 3lb Chuck Tender Roast from Wallyworld last night on sale because of Manager's special.  It was a dollar off per pound at about $3/lb. First, I used some Worcestershire and added a basic rub overnight in a plastic bag overnight.  I used the same rub recipe that I use for my...

    First beef back ribs

I have yet to try them myself.  I would try to treat them like pork ribs(3-2-1 method.)  Just make sure to remove membrane if there is any.

I think I did some stuff wrong

I hope you didn't throw that cheese out! Like the others have said, you must let the cheese mellow for at least 2 weeks.  I usually wait a month or more.  Many people use vacuum sealers after smoking, but I am too cheap to buy one, lol.  I just wrap in plastic wrap and ziplock.
