Thanks, I've done steaks and sides just never bellies. I didn't know if there was anything to be cautious of or different methods. But hey if you can do them just like a side then there is only a limit to the imagination. Ill do a walkthrough when I decide what I'm doing,
Thanks again,
Myke
So I was given about 15lbs of salmon bellies, Only issue is, Ive never used them for anything. From what I have read they are outstanding pieces. Anyone have some suggestions and/or recipes? Any help is appreciated since I do not want to just try and ruin them.
Thanks
Myke
I was at my local butcher today and asked what he had that would be fun and he asked if I ever made bacon. My answer was no but I do love me some bacon. He told me that he had 4 bellies that he was getting ready to make some bacon with but would sell me one If I wanted to try. Of course I did...
I agree, and since they told me that I have stopped all purchases of meat from them. If your in the St. Louis area it is Shop N Save that I was told this by.
I took it to an IT of 140, put it in the fridge overnight and put it in a convection oven to warm back up wrapped in foil. the drippings made great ajus.
The slicer should have been bought a long time ago. very versatile. I even sliced everything to make a salad lol. Hasn't bogged down or got hot once and ive been using it alot.
After steaming for an hour and a half, the results were awesome. I will be doing this again soon. Sorry no picks of it made into a ruben it was too good to put the sammy down.
