    IR is a good idea, will add a couple of those slots. Adding bench slots, IDK, bench talent is usually fairly thin anyway, adding slots will make it thinner IMO.

    Got 2 new therms installed at grate level, much to my surprise all 3 were within 10° of each other. That's a very good sign.

    Use lump charcoal for heat and your wood chunks for smoke, it'll be easier than trying to burn the chunks for heat. Once you become more familiar with your pit you can switch to burning small wood splits for heat and smoke flavor.

    The general rule of thumb for smoking wood is that if the tree produces fruit or nuts it is OK for use, there are exceptions, of course. Maple is one exception that you can use. There is, or was, a list of smoking woods the Articles section, but I can't find it, my search results come up empty...

    More air to the fire. Not enough air flow and combustion is inhibited, hence the billowing white smoke. I added an upper vent on my CharGriller offset to help with airflow so I could burn wood as the fuel source. I think I posted a picture in the CharGriller Group section.
