Decided to try my first fatty and was got it ready for throwing on the smoker tomorrow. I don't think my wife is anywhere near as excited as I am. She asked me what it was exactly and when I told her she called it a gut bomb and made a face. I also learned an important lesson tonight... wax...

Picked up a couple of racks today at Sam's club...might pick up some more if the in laws come for dinner Sunday. Going to toss them in the smoker then along with about 4lbs of a Boston butt. My wife got me a set of rubs on Etsy I want to try out. :) Hopefully I don't end up with creosote ribs...
I attempted a chicken for the first time on my ECB(not modded just yet) and the skin turned black. It was very bitter tasting an inedible. What did I do wrong? The meat itself was tasty and when I checked the oven thermometer I use inside the temp was around 250 to 275.
yeah...PED has been running rampant hear. Just heard someone talking about a hog farmer they know losing a whole house of pigs. I hope that was an exaggeration!
Thanks...I hope to make use of my smoker this weekend. Was thinking about doing a couple of chickens but then saw the london broil on sale and was like mmmm beef.
How well do London Broils do with smoking? Is it something I should avoid? I ask because they are on sale for about half their normal price...:)
