Lots of people use a chimney to get the coal burning and "ashed" before putting them in, so there's little drop off in temp. As you use your smoker and become more familiar with it, you'll know when to light the chimney so it's ready when you need it.

Cooked it at 215. Did a 3-2-1, but the 3 was more like 3-3/4. I had trouble using the AMNPS at first and had to keep opening the door, so I went a little longer. Came out great!

It went great! The AMNPS worked like a charm after 2 hours of my being frustrated by it. All cuz I didn't read the directions well enough! I started a thread in the PORK forum with Q-View, etc...

Yup. Clearly says Cherry can be hard to keep lit and to put it on top of Oak or another easier burning pellet... Could have saved myself 2 hours of frustration!
