2:00p.m butt at 165* ready to wrap. At 5:00p.m. at 204* and ready to foil. 6:15 p.m. ready to eat. For got to mention I used Jeff's rub on the fatties and the butt with mustard. Also put a finish sauce (SoFlaQuer's) on the pulled pork and my homemade BBQ sauce on the side.
Up at 5:00 am to start the butt. Put fatties on at 6:30. by 7:30 heard a lot of complaining from other campers. They didn't like waking up with growling stomachs from the wonderful smell of smoking food. Hope it turns out as good as it smells.Fatties made with scrambled eggs and mex. 4 cheese.
This is my rub for pork
6T kosher salt
6T brown sugar
1T lemon peel
2 1/2T fresh ground black pepper
1T paprika
1T garlic powder
1T lemon pepper
1t cinnamon
1/2t allspice
thanks for the complements guys. I know I couldn't of did it without all the help I got from this forum. I have to say they tasted even better than they looked. also need to thank WALKING DUDE for the tip ( thinner metal.........use an empty tuna fish can, or cat food can.......perfect...
