    What is your favorite wood to smoke with?

    I consider hickory and pecan the same wood, so either of those for heat, and apple or cherry for flavor! I do like the mellow flavor of white oak, but just not as much as the hickory/pecan.

    It will be a while, but for $2,000 you can't beat the price on a new one! The funny thing is that you rarely come across a used Lang for sale. Here is a pic of my garage, and a pic of my next smoker!

    Question about my smoker

    On a different note, what kind of charcoal are you using? It seems like you are generating a large amount of ash during a cook. My Lang only produces about a large coffee can full of ash during a 12-14 hour cook. However, my cooker isn't as large as yours, and I pretty much only burn sticks.

    I use the Nu-Temp with two remotes. A great tool, and I can hardly imagine smoking without it. The base will accept signals from up to three remotes, and has both high and low alarms.

    Dave, I foil at 165, and bring to 195 before removing from the cooker. I then place in a cooler with a towel on top, and let sit for 1 to 2 hours. The meat will just fall apart! Give it a try.

    Just something to think about, but when I started using the minion method, I was using the old Kingsford, not the new stuff. The new stuff lights much quicker and hotter, so I mostly use it in my kettle. I do use a mixture of K and lump in my BSKD, but my basket facilitates the slower burn...
