I have had this happen a few time to when it was windy out and the chip loader was in the direction of the wind. It scared the hell out of me the first time and it did start a fire inside. I don't put in the wind anymore if I have to I put something by the chip loader to block the wind.
How do pellets work in the MES any tips? My local hardware store expanded and I bought some sassafras and mulberry pellets,they sell alot more but thats all they had in stock. Has any one tried these flavors? They are made by bbq-delight.
I am going to be smoking a 12lbs. turkey in the next couple of days and was thinking about using adler wood. I have never used it before so I have know idea what the flavor is going to be like.Is this a good wood for turkey?
The older one did not have a top vent. There is no wires in the top as far as I know,but i would say a 1 inch hole should do. If I am wrong other people on here who are well educated will let you know.
I smoke mine at 250 pull it off at 145-150 internal temp. and let is rest for 10-15 mins. Of course if you are worried about it being dry you can also brine it.
