Just seen you're in Lubbock...does the Air Force still have any activities on the base that use to be there? If so, if you can get a connection on base, they'll have many types of empties stock piled somewhere. Not that I'd know mine came from a similar place.
They are very difficult to find in my area as well! I thought it was going to be easy with all the food type processors etc in my area, but I learned a lot of them have switched over to plastic drums. Ask friends to keep an eye out, I just happened to mention to someone at work how hard it was...
Thanks guys!
Bigdog, click the UDS Build link in my signature, it's a lengthy thread on my build. It's really a simple process and requires minimal tools (drill, adjustable wrench, pliers etc). The most difficult part I had was finding a drum. There are several build post also in the UDS...
Todd, Amen! lol
Al, I bring my own beer after an experience with an old neighbor, when he would be drinking say Coors lite and would offer you something else you had to be careful!! He was having Michelob and offered me a beer. As soon as I cracked the top of that bottle of bud I...
Dave, thanks! Nothing wrong with that GOSM for sure! But I have to say, this UDS is one smokin' machine. lol It's all the same when the propane tank is empty or you're out of charcoal! haha

Thanks Wylie! I've tried not foiling because I love the bark so much (who doesn't), but after 3 attempts at not foiling I hit major stalls and even had one butt go as long 20+ hours!! Each time I tried to go without foil I had similar luck! lol The foiling doesn't ruin it or anything, there...
First congrats on the new smoker and good luck with the comp tomorrow!
As the others have already given great advice, I'll just add a little. You didn't mention your method, however, I'd recommend minimum of 225* chamber temp, double foil at an internal meat temp of 165* and pull from the...
Not sure of the positioning of your lid probe, but I would think the one in the lid would be the hottest. If you are only using a short stem probe on the side (that doesn't reach out over the hot coals) it is going to read lower than your digital that is placed on your rack, directly over...
Thanks to you all for the kind words!
Steve, I was just going to spray it black and be done but my adult son wanted to show me his paint can talents...I didn't want to know how he perfected his rattle can skills..lol
hmcm - definitely have to move a butt up to the top of the list. It's my...
Thanks all! Well, we made it to 200° IT right at the 10 1/2 hour mark and double wrapped in towels and into the cooler for an hour.
I couldn't stop eating the bark as I was pulling, this turned out being one of the better butts I've done and was well worth the wait. Only hit a mild stall at...
