    Beef Tri Tip

If I remember either I was gong to smoke a trip tip, or somebody smoked one when I was thinking of doing it....In any case, The tri tip does not/did not come out well at all. There really is not enough fat in it to make smoking enjoyable. Now grilling is a different story. It will sit on the...

    Question on Ribs

Enjoyed football until USC vs Texas. Was home today and found myself watching practice between the redskins and ravens. . . . . and I was enjoying it. The drills, the catches, the hits. The commercials were much better. I am going to love this football season. And I don't have a favorite...

    smoke penetration

Smoke penetration works best for me when I stay LOW & SLOW. I never bothered to measure the depth of the smoke ring, but I am happy if when I cut the meat, I see a pink ring. One of the more science tyope will be able to give a better explanation. What type of meat are you have trouble...

    Question on Ribs

Spares cost less, so I generally go with those. Also, people will eat a LOT more babyback ribs than spares. I need to get an invite to your house, since you will feed me and give me beer. Brian gave you good advice, don't forget to take pics if you can. Keep us in the know of how things go.

    Thin Blue Smoke

Nothing wrong with that. When I started smoking meats, I cooked ribs every weeken for 2 months. 1 month to get them right, the next month becuase I like ribs. Smoke em if ya got em. Ice cream does not smoke well, but I have not given it many tries.

New & Green to Smoking Meats

You can smoke meat in a kettle grill, just have to do a "little" work. purchase a garden hoe, the hand held size works for me. rake coals to 1 side of grill, cook on other side. Add wood chunks/chips and you will be cooking in smoke. Low temps, will force slow cooking. Low & Slow in...

    BCC

Bob's answer seems to have covered everything on this subject. Do you still have a question, or is anything not clear? If I recall, your fresh chicken will probally still taste better than any chicken I would go to the market and buy. If you can not brine the bird, place it in a freezer bag...

    Smokin

Brian, there is no right or wrong way to eating...I myself like my BBQ with no sauce. The meat is the star of my plate, but my family loves sauce. Some have to have the emat taking a swim, others just need a light coating. If it is good to you, then you did it right.

    "OTBS"

Sir Brian, I second the nomination of TommyC for membership to the Order. His BBQ Kung Fu has also grown in leaps and bounds. He is more than willing to help someone, less knowledgeable than he. The Order would be proud to include TommyC in its ranks.

Tommy I don't see any cold ones on the counter. You mentioned that ribs were tender, I assume they were tasty as well. Any chance of a pic of the ribs after the cut? Love the look of the smoke ring... Did you 3-2-1?
