This is probably a dumb question, but I'm new and have to ask or I'll get confused and ruin the meat! If you put the meat in a 275 degree smoker, why do the temps on your outside thermometer read 125 and 51? What do those numbers mean?
I haven't ordered yet, but probably will soon. Is this a recipe that lets you make as much as you want as often as you want to, or does it come pre-made?
One other question. Approximately how many ingredients are in these? I'm in a really small town and I'm not sure my local groceries will have...
I can't vouch for it since I'm new and still learning, but there's a recipe for fast smoking on http://www.kickassbbq.com/. The author of this site has free recipes, pictures and is a member here. That's how I found the site. The pictures he posted look really good.
I haven't gotten the smoker out of the box yet. It's a Christmas present for my dad and I plan on smoking things with him. I'm trying to figure things out now. I know very little about smoking.
What kind of meat is something good and easy to start with?
If a brisket or any meat reaches a plateau, just leave it in the smoker until it reaches the desired temp?
BTW, I signed up for the e-course and got my first 'lesson' today.
I've read about the temperatures it takes to cook different meats and the finished temperature. Being new with smoking, I'm not sure I completely understand this.
For example, if it says to cook the meat at 225 and the finishing temp is 170, what does this mean?
