That's the one I have. Wife got it for me on Valentine's day. I've used it 5 times so far(meat only), and here's my thoughts:
1- several little pockets that little bits of meat gets wedged in so cleaning needs to be very meticulous
2- slides across the table while I'm slicing, needs someway to...
Man I'm liking the wood look, can't wait to see the smoke flowing. I saw you are gonna use a propane burner, so are you planning on using a pan with chips or an A maze N pellet smoker, or ...?
Anyway, I'm watching,
Kyle
Welcome Kyle,
I'm in Colorado Speings and use a Masterbuilt Electric as well. Anyway, you joined a great site and you can learn so much from all these great people.

Ok I'll be "that guy" that gives a reply not answering what you asked....but I can't help it. I know you said you want to do a belly for bacon but if you are really in the mood to make some bacon, do a quick search for buckboard bacon if you haven't seen it. Butts are always easy to get and...
Looks great, this is my favorite smoked meat I think. And it's so forgiving. I just did two yesterday in my MES with hickory in the AMNPS, great minds think alike. Your picks are making me want to eat!

Welcome Aaron, I'm in Colorado springs, and I use a Masterbuilt Electric myself. If you have any questions let me know. Oh and your hooked now, I use all my free time cooking or looking at others work to decide what I'm cooking next. Good luck,
Kyle
I had it all packed up and ready to ship it south, but dang, I turned my back for 2 seconds and it was gone. I'm still looking for it, if I find it I'll let you know.
I soak mine for 6-12 hours in ice water and change the water every two hours. but unless you slice a piece you really don't know how salty it still is. Sometimes it takes longer than others to get the flavor I like. Good luck with your smoke, I look forward to seeing it.
Well coming from a guy who bleeds bacon fat, it's really good. I ended mine off for about a minute and it was just enough, not to salty. Thanks for looking.
