Looks like a fun and tasty day! I've tried the pan once, held all the drippings and didn't allow for any bark on the bottom and made the bark on the sides a little soggy. I like bark so I didn't care for that experiment. Oh and also the pan got coated with creasote and was just nasty when I...
I love the look of that cedar, nice job. Being from Georgia pecan was abundant. It's by far my favorite all purpose wood but I'm probably a little biased. I don't think you'll regret trying it.
Welcome from another Georgia boy. Great site with great info and great people. Good luck with the new smoker, it's an addiction, but at least with this addiction you gain friends.

Jerry,
Thank you and Mrs. Karen for hosting a great event like this! I obviously can't make it but will be watching the thread and day dreaming that whole week. It's folks like you that make this site what it is. Maybe I'll see yall at one in the future but until then, enjoy and please keep Tim...
Don't have an answer at all, but I'll definitely be watching. I love gyros and have recently started making sausage so this will be a must try. Good luck
I second running it through the vent hole. I don't like drilling holes in things in case there is a problem down the road and something like that voiding a warranty.
Little update, the sellar did finally get back to me requesting my order number so hopefully I'll be receiving a new one. I ordered another probe since the box I got only had the one used one but having an extra probe on hand won't be all bad. I'm kinda optimistic now that this might get fixed.
HEADS UP
I'm not gonna bash anyone yet because it's only been a couple days but the 49.99 maverick I ordered from DBROTH showed up to my door step with smoke all over the probe, yes I said probe cause it only came with one, and to go one step further there was still nasty sticky old bbq sauce on...
Well then my idea is not helpful, I'm out of guesses :-/ Honestly though ever piece of meat is different, you could do another 100 perfect before you get a dry one again. It was probably a fluke, I wouldn't change your ways if your happy with your normal outcome. I've also been experimenting...
Are the smaller ones you get boneless?
I can only speak from my experiences but I've done a few 4-5lb boneless butts and they all came out drier than my bone in butts. I usually buy around 10lb bone in butts and never have an issue with juiciness. Sometimes I foil sometimes I dont (really just...
Looks great, glad it still turned out great. That's one of the best parts with smoking, it can be very forgiving. Like others said, cutting it in half will give you more smoke surface area and cut down on time.
Well I'm still wet behind the ears with it but it's been very enjoyable. And more importantly it's not hard, yes time consuming but I am also mainly using premixed seasonings. My vote is to just jump into, you can learn as you go, and this site in the Google of all things delicious.
Thank you very much, and thanks for watching. The only thing from the batch I haven't tried yet is the pork sweet/hot Italian. I'm not sure how spicy it will be cause I only added 2tsp to a 5lb batch.
