    Brisket & Burnt Ends

Good lookin brisky, If I could offer a suggestion. If your gonna trim alot of fat off, you might want to inject the flat a bunch. I try to trim my packers, but mainly the hard white fat towards the deckle end, not to much on the flat end unless its a comp and I need a specific width to fit in...

    Oak for Brisket?

Oak is great for brisket! I use oak for all smokes as a base wood. It makes great coals( I use a stickburner). Add to it your flavor wood of choice, and your all set. I cook packers at 245-260 all the time, and it works just fine, these packers take 8-10 hrs. after a couple hrs rest, they...

    Vac u Pack

well like I said a couple weeks ago the foodsaver was on its last leg. Upon further research and some good info from Erain, I decided to buy the VacUpack. It is a bit larger than the foodsaver, but I love it. It does a great job, has a much better vacuum pump , and the heat seal is about twice...

    Brisket dilemma

200 is too low of a temp in my opinion. I smoke mine at 245-260. Never tried one at 200, never seen a good reason too.

    Vac u Pack

My foodsaver is finally on its last leg, so I am looking in to a replacement. I need one that will last at least 5-10 yrs, or at least be worth fixing. Alot of the Chineese junk aint worth fixing, and most of it can't be fixed very reasonably. Lookin real hard at these VacUpack units.

Rust On Outside my Lang Help!!!!!

That is exactly right, I redo mine about 1-2 times a month, but I smoke food 2-3 times a week usually. Nonstick spray works well too. NOTHING that you use will work permanently. I think I repainted mine 3-4 times before I just gave up on it and went to the veggie oil. After a while, It takes on...

    My Halloween nightmare Baby Backs

I would suggest not packing on brown sugar, or any sugar like that in the beginning of the cook. Save it for foiling time.

    Big project! Help! :)

Well Bernie, here is how I do it. I try not to have them fall off the bone myself, but pull off easy and a clean bone that dries white. I use a stickburner, but your GOSM should do just fine. 15 racks seems to be alot for that rig. here is 16 racks in my mobile stickburner! I use the...

    Long time no post...........Ribs!

It just takes practice. You'll get there. I was searching for answers and help a few years ago too, and found it here and other nice sites. After you smoke a couple hundred racks, you will get a feel for how they are doing, and have a confidence that always helps too. Lotsa ways to smoke good...
