I have made kielbasa a few times, but have wanted to try andouille so I would have some when I make gumbo or jambalaya.

Here is my Basic rub for ribs and chicken

3/4 cup paprika
1/2 cup sugar
1/2 cup salt
1/4 cup ground black pepper
3 tbsp cayenne pepper
2 tbsp thyme
2 tbsp dry mustard
2 tbsp cumin
1 tbsp sage
I smoke them at 235 for 2 1/2 as well. But I have done them when I am smoking other things and have it set at 225. I just smoke a tad longer. works fine.
