    Thanks Bear. I did back down the smoker temperature, but I guess this was one pampered cow... it just keeps going up. Was going to do a reverse sear, but wasn't sure whether to do it before or after the rest.

    Took 19 hours without wrapping to get done, but I thonk it was worth it. Tried ABTs for the first time too, because cooking for 19 hours wasn't quite enough... Thought I'd add another three hours to the total! People seemed to enjoy it all though.

    I have reheated them before and they are ok.  Never quite as good as fresh. I have had much better luck reheating plain smoked meatloaf.

    Called Maverick.  No go on replacements for free. Will purchase from Amazon as was suggested by NivekD.  Just hope the problem truly is the probes and not the thermometer itself. Thanks All!
