    I use eye of round. It doesn't have alot of fat that needs to be trimmed off! Hang the Jerky by toothpicks and you can get alot more in the smoker. Blza

    I don't know where you live .... but check your local tree trimming service. They can help you out. Or you can do like me and get your smoking wood from a sawmill. A heck of alot cheaper then getting it on-line. Blza

    Sending Jerky to Iraq....

    We sent a letter and some misc. items such as some Starburst candy, NFL Magazine and some other smaller items. Plus 25 packages of Hickory/BBQ flavored Jerky. We had that box filled to the Max.     I just got done smoking around 15#s of beef jerky for some Troops over in Iraq!! It came out real nice... I had to use both of my smokers so I could get it all done in one smoke. I hang the strips of jerky by toothpicks so I can get more into the smoker. It took about 5 hrs. to get it all done...

    Well, I got my needle valve installed into my gas line and I couldn't be happier...... on low, I got my temps down to 110* with the ambient temp being 70* today. I very highly recommend doing this mod if you are having trouble with high temps. I started out at 225* and now I am down to 110*...
