I use eye of round. It doesn't have alot of fat that needs to be trimmed off! Hang the Jerky by toothpicks and you can get alot more in the smoker.

I don't use Pork Butt.... I use Pork Trim instead.... It is approx. 70% fat and 30% meat.

I would give it a try and see how you like the results on a small batch and then go from there.

I don't know where you live .... but check your local tree trimming service. They can help you out. Or you can do like me and get your smoking wood from a sawmill. A heck of alot cheaper then getting it on-line.

We sent a letter and some misc. items such as some Starburst candy, NFL Magazine and some other smaller items. Plus 25 packages of Hickory/BBQ flavored Jerky. We had that box filled to the Max. It will take about two weeks for them to receive the box.
We all know they DESERVE it!!!

First off, We got similar smokers! I got mine a few weeks ago... and I love it. I leave my vents, down by the burner, about a 1/4 the way open. You want air to get to the wood box.

Do you have the heat on High? That will get it to catch on fire alot quicker too. If you are looking for chunks try your local tree trimming service OR do as I do and get your wood from a sawmill for free.

I just got done smoking around 15#s of beef jerky for some Troops over in Iraq!! It came out real nice... I had to use both of my smokers so I could get it all done in one smoke. I hang the strips of jerky by toothpicks so I can get more into the smoker.
It took about 5 hrs. to get it all done...
Well, I got my needle valve installed into my gas line and I couldn't be happier...... on low, I got my temps down to 110* with the ambient temp being 70* today. I very highly recommend doing this mod if you are having trouble with high temps. I started out at 225* and now I am down to 110*...
