I did some sauteed mushrooms in abt's before. I just did them in butter with spg and cooked em way down. Lay them on a paper towel to cool and dry and fix em up. Works great, give it a try.

If I'm cookin ribs I normally do two slabs because I like to have a little of both. Sauce one, keep the other dry. But if I had to choose just one I would take dry rub every time.

I use Montreal steak seasoning on chucks. I don't care for any sugar on my beef. Otherwise good old salt, pepper, and garlic is always a do-able standby.

I'm with Wu on this. I did two butts last weekend and I wanted to make sure I got good bark. I used two cans of the McCormick's Pork rub with an extra cup of dark brown sugar. That was for both of them and it worked great. Minimizing the number of times you open the smoker and dark brown sugar...
I have done butts both with and without the mustard slather and I didn't notice enough diff to continue with the mustard. I usually just add enough extra brown sugar to make sure they get a good bark.
