    I knew a guy that used kitchen range (stove) gasket from an appliance parts store to seal his smoker - I don't know how he attached/adhered it to the door but it is high temp, food safe and worked well.

    Looking good - It will be interesting to watch your progress. BTW - I have the exact same welder and your welds look fine - it's fairly difficult to get great looking welds with flux-core wire. If I start to weld more often I will be investing in a gas kit.

    Clean it out?

    Agree with Raceyb I use orange cleaner ( citrus based ) and clean and hose out once every month or so. I cover my burner with a plastic bag, scrape out the heavy stuff then spray - wait - hose. Grates get soaked / cleaned before every smoke and sometimes thrown in the dish washer.
