    If the chunks are turning to ash in a propane smoker with chip/wood box it would mean the wood is completely burning as opposed to smoldering doesn't it? I get quality TBS from my GOSM but take care to not have my wood catch fire and burn.

    OMG! Yes! - My property is loaded with wild cherry - hate to say it but we have so much its whats burning in the woodstove Of course I save all the good heartwood and cut it up to fit my smoker box. Cherry mixed with a bit of apple is most all I use.

    Got one of these (Taylor) for Christmas from the BIL - He said Lowes had them on clearance at around $10-12 - Have used it 3 times so far and it works very well - I like the backlit display and hold features.

    Just a thought to remember - whenever I make jerky I have the meat guy at my grocery store cut it - I just tell him it's for jerky and how thick I want it sliced and it's no extra charge.

    ABT prep

    You can find lil smokies at any grocery store (usually by the deli dept. where the packaged salami and pepperoni is) - they are pre-cooked. On my last ABT's I used half a maple sausage link (uncooked) along with my cream cheese mix and it cooked perfectly fine.
