Have no idea about the Masterbuilt but I bought a Big Block recently and really love it. If the Masterbuilt has same dimensions and the extra large water pan and cast iron wood box I would give it a try.
With the huge cast iron wood box the BB has I always line the bottom with charcoal briquette's then put my wood on top of them - does it make a difference? I think so but of course I'm biased

Just got my Big Block from Bass Pro Shops to replace my smaller GOSM - on sale for $179!! If you have a chance get one!! the improvements are fantastic, the thing is huge! No more cutting ribs and briskets in half. The cast iron wood box and water pan are huge so no need to open the smoker...

We all have the same "problem"
You have the tools ( propane smoker, Taylor Thermo and soon an ET-73 - Exactly what I use to smoke ) to turn out some great "Q".
Start off with something tasty and fairly easy......chicken or turkey (whole would be nice!) or a pork butt or 2...
And they have some great Brown's backers clubs down there - Use to spend 2-3 weeks in the winter with my Dad during football season and they welcomed me with open arms and cold beer!
No aftertaste with my GOSM (Kemore version) either - I have a much larger wood chip/chunk box and I always put about 8 charcoal briquets in with my wood chunks - I think it makes a difference but might all be in my head

I also obtained a bottle of white soy sauce and it was fantastic.
Tobasco also makes a spicy soy sauce that's really-really good, I use it when I make chinese at home.
