Different Kind of Smoke and Fire

If you did that in CA, you would need permits and a meteorigical survey to pollute our universe. I think I should move to FL.

    Your best EATS in NYC

There are many fantastic places to eat in NYC. Bobby Flay and Mario Battali serve some great food and you would not be disappointed. But my Daughter who is a personal chef to some of the wealthiest families in NYC recommends the following: Le-Bernadin, on the West Side (great for lunch also)...

    Coffee/Spice Grinders

I have read posts where people talk about getting a grinder for spice mixtures. Well, guess what? No need to have 2 grinders in the kitchen. When I need to grind some spices, I take about 1/2 piece of bread, tear it up into small pieces and put it into my coffee grinder. Process and wipe it out...

Bought it for $300 with a blown head gasket. Fixed the gasket and ran it for 3K miles and blew the engine. My neighbor was a GM for an oil company, it head told that Shell gas was the problem. He called the head of Shell for me and they sent me a check for $1K. Had the engine rebuilt and pumped...

    new interest in smoked cheese

I too love smoked cheese. 2 weeks ago I smoked 2 pounds of medium cheddar as a test run. The hardest part was to wait 2 weeks for it to bloom. Forget using your smoker as the source for the smoke. I took a Bushes' Smoking Beans and cut the top of most of the way so it has a flap. Then used a...

    "KILLER" ABT's

While watching an episode of Bobby Flay's Throw Down, he went to New Mexico for a Chile Rellano throwdown. The 2 challengers said that chiles with a curved stem were hotter than ones with a straighters stem. I was going to test this the last time I did ABT's, but cocktails interrupted my serious...

    brinkman rib rack

I use a v-shaped roasting rack for my roasts or turkeys in the oven and then turn it upside down for a rib rack. Cheaper and easier to find than a specialized rib rack, 2 birds with one stone.

    Is this smoker worth $100?

I went and saw a smoker that looks just like that. Does it have a New Braunfels plate on it? If it does, he is right about the price. If you need a smoker that large, offer $75 (that's what the guy wanted that I looked at and it had a propane burner in the fire box). With a few mods, you will...

Ever used Mt. Dew for a spritz?

I have spritzed my hams with Fanta Pineapple soda. I have used Dr. Pepper on my ribs. Pepsi on a chuckie and on and on. Smoking is not a science, but an art. Even if you fail, you get to eat great meat. Your smoking is only limited by your mind.

Mesquite Charcoal in Northern MA, Southern NH?

I hate to sound like a shill for this hardware chain, but you can't get better service or prices. They will deliver at no charge to a local hardware store for pick-up. You will fing one less than 5 miles from your location.

    Mushy spare ribs?

Sounds fine to me. Just could have been the ribs. I just did a rack at 230 for a 3-2-1 and they were killer. Smoking is not rocket science, it is more like trail and error. Don't give up, hang in there an do it again. Mistakes will always get eaten.

Okay guys lighter fluid or not

Many years ago, my Dad and I built a Summer Cottage on Cape Cod. Now only two things grew wild on our property, blueberries and Poison Ivy. Since I was the only one of our seven that poison ivy didn't bother, my Dad made me pull it all up. He told me to bag it up so that we could take it to the...
