Was perusing Rytek's Book and saw a recipe for beef bacon. It seems to be made from a brisket.
My wife is allergic to pork so I need to know if anyone has tried this and your opinion of how it came out.
Tomorrow i will start a pork belly for the rest of us, but I hate to leave her out.
Thanks...
You will only be forgiven if you FedEx overnight to me half of all that you smoke. All joking aside, welcome to our little home. You will find a group of smokaholics here who will be glad to help you in any way.
I looked at one today and the door on the side is hokey. To buy a new one at $400 would make me think twice. The one I looked at was at ACE Hardware. For that much money, they could put a door that wouldn't leak worse than a Brinkman.
Been looking for a barrel for a while found this on Sacramento Craigs List:
55 gallon drums used to store honey with lids (no burn out?)

I post replies when I can add to the discussion. I start a thread when I really need help. What bothers me is people that post things like "I don't have this smoker, but someone will come along to help you". Are they for pathetically looking for points, or just looking to achieve a great number...
I just went outside to see what my Charmglow 4 burner would do. After 6 minutes, I was registering 450 on the stock thermometer. It sounds as though your regulator is not allowing enough gas to the burners.
You might want to look at Billbo's recipes and customize them to your liking. Go to members list; click B; go to page 29. Click on Billbo, then click on all threads started.
I buy my wood through doitbest.com. 10# bags of chunks for under $8.49. No delivery or sales tax. You just have to pick it up at a local building supply store.
I was smoking 2 stramis last week and hit the "dreaded stall" for 2 hours. It just stuck at 155 and would not move. Then 'Bingo" it finally moved. As Yoda would say,"Patience my son". No one has come up with an answer for the stall. It doesn't happen in your oven (that you know of). Another one...
Just finished one the other day. I did an overnight soak. The 1st soak was for 4 hours with a sliced potato in the water. Changed the water before I went to bed and put another potato in the water. Changed the water in the morning. Put in in for a last soak for an hour. Smoked with oak and...
I picked up CG SNP at Orchard Hardware for $165 no tax. Look around. If you have patience, you will find the deal. I bought mine way ahead od schedule only because of price. It is sitting in the garage waiting for my smoking patio.
No poll came up. I have developed a taste for capers. I like the saltiness they provide in a recipe. I think that a lot of people associate them with sardines in recipes. I don't like the looks of sardines from the can so I use the paste in the tubes. I guess it's an acquired taste.
The 1st 2 times, my Terriyaki Jerky came out just o'k. Just didn't pop. So it's back to basics. Just got Rytek's bible so I plan on starting there. Now here is where I need your help. I like a slightly smokey flavor in my Jerky; so I was thinking about doing a cold smoke with my soldering...
