No matter which mix you prefer, the ingredient that takes it over the top (no it's not Yoshida's) is A-1 Sauce. It adds extra body and is great. Bartender buddy of mine used it to win Best of the CA Bay Area 3 years in a row.
As of 7:15 PM PST Santa is in New Brunswick and on his way to Puerto Rico (according to NORAD). Before he gets to my house, I want to wish every member of this great Web Site a Very Happy Holiday Season. Also, I want to thank everyone from a NewB to the most experienced, and especially Jeff for...
Thanks for all the sharing and info. I can't believe how many people have been energized, myself included, by this thread. As soon as I get back after the Holidays my journey will begin thanks John.
Planned a great smoke today with Q-view. Took the Pictures and the wife went off with the camera case sans camera. She's got my cords and I have the camera. Oh well will post Pics tomorrow. But I will narrate my epicurean delight. In my area, beef ribs are all bone and not much meat for $.99/lb...
Because of the density on bone, smoke should not permeante into the bones. The flavor that is imparted is from the marrow. The smoking process shouldn't affect it.
Man you are really on Fire today. I swear if you do one more thing today, you will melt that smoker. PS I will PM you with my address to share the bounty. THE DUDE RULES!
I hope that you are not relying on the therm on your smoker. Mine is off by 50 degrees. It sounds like your temp in the smoker is way to high. This would cause the ribs to be tough and would account for the short cooking time. There is no correlation between rubs and temp. As a quick check, go...
They always surprise me. Depending on the size of your oven it probably will take 2.5 to 3 hrs. Closer to 3.
Make sure you taken them out of the frig an hour before putting them in the oven.
Nothing better than a good top round roast. It's the best dollar value in the meat case. Over the years I have cooked quite a few of these babies for catering jobs. When done properly, it will taste just like a fine prime rib.

Back only 2 days and you are on fire. You probly have enough room on the trailer to mount the new smoker and build yourself a walk-in cooler box. When I remove the membrane from the back of the ribs, my choice of weapon is a church key.
Today I was able to pick up 10# of Apple Chunks that I ordered from doitbest.com at a local Store for $8.28; no shipping, no tax. Then went and picked up 10# of pistacchio shells. They told me it would be $2/lb. Got there and it was $12.40 for the 10#. Came home and FEDEX had delivered my new...
